Preparation

Make Batter: In a bowl, mix idli mix and curd to form a smooth, thick batter. Let it rest for 10-15 minutes. Add water to adjust the consistency. 2. Add Eno: Add Eno just before steaming and gently fold it in. The batter will turn airy. To avoid using eno, the batter can be kept overnight at room temperature for fermentation. 3. Pour into Moulds: Grease idli moulds, pour the batter, and steam for 12-15 minutes or until a toothpick comes out clean. 4. Serve Warm: Serve with coconut chutney, sambar, or a drizzle of ghee! Millieartth multi millet idli mix can also be used in making vegetable idlis by adding chopped veggies, choice of masalas and tadka to the batter.
