The grains are washed and kept damp for 24–48 hours until sprouting begins, then sun-dried and ground into flour. This process enhances digestibility, boosts micronutrients, and imparts a naturally sweeter aroma and taste than regular Khapli atta. Low in gluten, high in fibre and protein, and with a low glycaemic index, it supports blood sugar regulation and suits those with gluten intolerance.
