🌱 Vegan Stir-Fry with Peanut Sauce 🌱
Ingredients:
🥦 1 cup broccoli florets
🥕 1 carrot, thinly sliced
🫑 1 bell pepper, sliced
🧅 1 small onion, chopped
🍲 1/2 cup firm tofu, cubed 🍶 1 tbsp soy sauce
🥜 2 tbsp peanut butter
🍯 1 tbsp maple syrup, agave syrup, or date syrup (alternatives: 🍚 brown sugar, 🥥 coconut sugar, 🌽 molasses, or corn syrup)
🍋 1 tbsp lime juice
💧 2 tbsp water
🫙 1 tbsp sunflower oil, canola oil, or vegetable oil
🧂 Salt to taste
🍚 Rice or 🍜 noodles (optional)
Steps:
🥄 Prepare peanut sauce: In a small bowl, whisk together 🥜 peanut butter, 🍶 soy sauce, 🍯 syrup, 🍋 lime juice, and 💧 water. Set aside.
🍳 Heat oil in a pan: On medium heat, add 🧅 chopped onions and sauté for 2 minutes.
🥦🥕🫑 Add veggies and tofu: Add 🥦 broccoli, 🥕 carrots, 🫑 bell pepper, and tofu. Stir fry on medium heat for 5-7 minutes until veggies are slightly tender but still crisp.
🥢 Add sauce: Pour the peanut sauce over the stir-fry and mix well. Let it cook on low heat for 2-3 minutes.
🍲 Serve hot over 🍚 rice or 🍜 noodles if desired.
